Taking into account the consequences of nutritional imbalances in the development of diseases, it is considered important to determine the profile of fatty acids (FA) in diets with different lipid sources and their impact on serum FA of growing rats. Diets with different lipid sources and complete in the rest of the nutrients were prepared. The lipid sources used were butter, olive oil, high oleic sunflower oil, sunflower oil, and soybean oil (control). Animals were fed with experimental and control diets for 10 days. The FA profile of the diets and of rat serum was determined by gas chromatography (GC). Changes in FA profile in serum occur depending on the source of fat provided by the diet. Therefore, the determination of fatty acids is of utmost importance, as a diagnosis of the deficiency of essential fatty acids, EPA and DHA, whose functions are essential for the proper functioning of the body.
