Molasses from sugarcane process behaves as a non-newtonian fluid, that means, there is not constant relationship between the effort and the speed of rotation, because of the own characteristics of composition (gum content, polysaccharides, etc.), Then the direct determination of apparent viscosity does not yield a reliable value. Calculating the viscosity of a non-newtonian fluid involves parameters as flow index (n) and consistency index (K). The aim of this work was measure apparent viscosity from different molasses and calculates real viscosity as a non-newtonian fluid. Eight samples of molasses were evaluated from different mills in Tucuman were collected during the 2015. Results of real viscosity were found in a range of 22.26 to 213.34 [Pa.s] and this was compared with apparent viscosity measured, with relative error from 6.09% to 51.02%. We can conclude that the proposed methodology is useful for the calculation of real viscosity in molasses of mills Tucuman, corroborating the non-newtonian behavior of this type of fluid.
