Each of the areas where the social classes of various kinds are developed, is more or less a community of practice. Speaking of practice, we refer to culture, a joint venture, a shared repertoire and mutual commitment among members to interact and negotiate in countless political relations as Wenger (2,001). This research considered two types of "enterprises": the Institutional dance academies, and Non-Institutional and night-cellars in private meetings. The venue chosen for this work is "The community of practice salsa de San Salvador de Jujuy, a community that is in constant dialectic between these two" enterprises "that are practiced in many geographic areas. The purpose of this analysis is the interpretation of all non-formal learning that somehow determine access to that tight space and named: the sauce. The methodology utilized: discourse analysis and contextual definitions, the same shall apply momentarily on observations and interviews. With advances in the subject under study can contrast two very different conceptions about the concept axle: community of practice proposed by Etienne Wenger (2,001), while for some of its members there is a community based on social interactions, for others it is a geographical space of prestige, "Pure Love" resto-pub, which really makes them active participants. Being part of this "institution" is not only problematic field immersion addressed, but also is not clearly defined what it is, although even this seems to have a social body that may be represented by the rest-pub.
