This paper analyzes the impact which recent transformations in wine production over the wine-making establishments of Mendoza, Argentina. Two dimensions are studied: the changes in the productive structure of different types of wineries and the productive mobility patterns of those wineries. The main data source is the dataset provided for the Instituto Nacional de Vitivinicultura (INV) for 2004, 2008 and 2011. It is observed in the paper that changes in the productive forms in the wine production are still in their beginning state and that those establishments associated to the traditional model show fewer possibilities of change than the rest
