Goat´s milk is considered a highly beneficial food for human health. In fact, its fatty acid (FA) composition is one of the most influential values it has. Feeding animals with supplements rich in linoleic acid permit to obtain a healthier milk by changes in the fatty acid profile. The FA profile tend to be modified through the reduction of the hypercholesterolemic fraction and the increase of isomers of the conjugated linoleic acid (CLA) and its precursor the vaccenic acid (VA 11-trans C18:1); both with favorable properties for human health. The objective of this experiment was to determine the changes induced in the FA profile and the atherogenic index (AI) of milk, after feeding grazing dairy goats with discard chia (Salvia hispanica) seed, a very low cost product. Nineteen dairy goats in mid lactation (100 ±15 days) were grouped into two treatments. Both groups were grazing a winter pasture. During the milking were offered 700g of chia seed (52% purity) per each animal of Chia Group, and 400 g of corn per animal of Control Group. Milk production was recorded 5 days a week during the 35 days of trial. Milk quality and fatty acid profile were determined in weekly samples. Production data and quality parameters were analyzed using t- Student test for independent samples, while the FA profile was analyzed using Wilcoxon test for independent samples. No statistical significant differences were detected for milk production between treatments (Chia Group: 1685 ±107.60 cc/goat/day vs Control Group: 1660 ±53.25 cc/goat/day. As regards the chemical composition, fat content was the only component that differs statistically, being highest in the Chia Group. (Chia: 4.09 ±0.15% [a], Control 3.69 ±0.20% [b]). The concentration of the hypercholesterolemic fatty acids C12:0, C14:0 and C16:0 was reduced after feeding chia (26%, 26%, and 22% respectively). The AI was reduced in this treatment to 1.58, what represents a 37% less. The increase achieved by including the oilseed over the AV concentration resulted in a 133%, while the increase in the CLA cis 9; 11 trans was 97%. According to the results obtained in this study, it could be concluded that feeding dairy goat with discard chia seeds allowed the increase of the fat content without altering production or others milk components.
