Sensory analysis is the evaluation of organoleptic properties of a product by the human senses. For this evaluation, experimental design and statistical analysis play a fundamental role. In the present work we show a methodology that takes into account both the design made in the data collection and the multivariate nature of the data. For this, inferential techniques are combined with descriptive analyzes. In particular, Analysis of Variance is implemented to detect the possible panel-honey interaction and Multivariate Analysis to perform product characterization. The analyzed data correspond to 40 samples of honey from the season 2014-2015 harvested in different localities of the province of Entre Ríos, which were evaluated by a panel formed by four trained tasters. The results allow differentiating the samples according to their properties and to perform an evaluation of the panel in order to determine on which attributes it is necessary to perform a better training.
