Resumen

This research proposes to connect the transformations in the territory's uses with the diet's degradation that has an impact on the higher incidence of the weight excess among non-communicable chronic diseases of Argentine society. In the national juncture, the malnutrition due to excess oustes the undernutrition as the main problem connected to food. In the regional framework, the situation seems to be different because both of them coexist. In the regional economies, the impact of the current agro-food chains shows the negative consequences, but it also offers as an alternative in relation to the productions for the international market. As from a sociological critical approach, it is proposed to characterize the importance of the region to transform the currect agro-food system that increases its productivity at the expense of the biodiversity, infringing upon the food's identity and becoming into an important factor of climate change.
