This paper analyzes the recent changes in the food safety system, presenting a comparison of changes that are being introduced in the European Union and in the United States. These changes are a direct response to the demands of citizens and to the loss of trust in regulation, as well as to the globalization of markets and the social changes in the most industrialized societies.
