The encounter between the local diaguita populations, and the Incas probably had points of agreement and other disruptive ones. The relationships between entities through mechanisms of exchange and reciprocity are an example of agreement; while the centralization of those mechanisms when diaguitas were incorporated to the Tawantisuyu represented a novelty and therefore, a conflictive point. In this article we will analyze, through the archaeobotanical study of an archaeological cooking context, how foods were prepared in political commensality meetings between humans and non-humans in Guitián square (Salta, Argentina).
