Abstract

This article explores the contemporary dinamics that intersect the fields of culture and tourism in which food and culinary production with marks of tradition and autenticity become heritage and resourses in the context of local and regional development particularly committed with tourist promotion of cultural diversity. Through the presentation of the case of the Quebrada de Humahuaca in Northwestern Argentina, the paper discusses the conflict between the processes of identity reivindication of the hosts communities and the production of a food and culinary heritage claimed by the tourist consumption of nostalgia, difference, sustainability and exoticism.
