Abstract

Acceso a la alimentación: el consumo de carne vacuna en Argentina (1980-2001). Ciclos hist. econ. soc. [online]. 2013, vol.21, n.42, pp.1851-3735. ISSN 1851-3735.

Beef in Argentina historically represented a significant share in the consumption basket of food to their inhabitants, however the economic transformations that took place in Argentina during the decade of the '90s generated a growing social dislocation and polarization even affecting consumption foods. In this paper we investigate how does the change in the economic structure explains the decline in consumption of beef, and argue that increased income inequality restricts the possibilities of access to beef by broad social sectors.
