MUCCIOLO, Leonardo  e  PEREZ JIMENO, Laura. Cervids final consumption patterns in middle Paraná River: the case of Cerro Aguará archaeological site. Rev. Mus. Antropol. [online]. 2015, vol.8, n.1, pp.79-90. ISSN 1852-060X.

Cervids were wide and regularly exploited by several Late Holocene hunter-gatherers inhabiting Paraná Plata macroregion. In the middle Paraná river, however, few research has been made on strategies involving their procurement, processing and consumption. The purpose of this article is to explore those aspects from the analysis of cervid assemblages of Cerro Aguará archaeological site (General Obligado, Santa Fe province). The selected perspective proposes final consumption as one of the most important factors impacting on the configuration of zooarchaeological record. Taking into account that cervid provide different edible products with different extraction costs (meat, bone marrow and bone grease), we evaluate the intensity of their exploitation in order to establish if there was variability on this issue. Results indicate that the two cervid species identified in this site, Blastocerusdichotomus and Ozotocerosbezoarticus, played an important role in diet, and that carcasses of the former were more intensively exploited in correlation with the higher availability of within-bone nutrients.
