Prosopis alba Griseb is a leguminous tree that grows naturally in the Argentinean Chaco; while Prosopis pallida H.B.K. is a leguminous tree that occurs in arid and semiarid zones of Peru. Fruits of both species have several uses in the food industry. In this study morphological determinations, and chemical and nutritional analysis were carried out on the fruits of Prosopis alba. The principal constituents of its pulp are: proteins, calcium, iron, dietary fiber and sugars. The morphology, composition and nutritional values of both mesquite pods were compared. The results of the work show that the fruits of Prosopis alba present similar morphology, chemical composition and nutritious properties to those of Prosopis pallida and that they could have identical industrial uses such as substitutes of coffee and cocoa.
