Abstract

MARIA BERNARDITA, Puchulu et al. Table showing dietary phosphorus to protein ratio and its application in Chronic Kidney Disease. Diaeta [online]. 2014, vol.32, n.148, pp.07-23. ISSN 1852-7337.

The control of dietary phosphorus is one of the most important interventions in the nutritional care of patients with chronic kidney disease, which becomes difficult when it comes to adherence to treatment. Protein and phosphorus are closely related in food. The K/DOQI guidelines recommend estimating phosphorus/ protein ratio of food. There is evidence of tables published with phosphorus/ protein ratio. So far, a table of common foods in the Argentine population with such ratio is not available. Objective: to estimate the phosphorus/ protein ratio that exists in common foods in the Argentine population and to establish its application in the nutritional treatment of the Chronic Kidney Disease. Materials and method: the tables were drawn from the Database of Food Composition ARGENFOODS, Vademecum Nutrinfo, SARA-Ministry of Health of Argentina and from information taken from nutritional labels. Results: included in the tables. Conclusions: the choice of food in the food plan of patients with Chronic Kidney Disease should consider phosphorus/ protein ratio. The tables provide food analysis and offer the possibility to adequate the patients' variety of food. The phosphorus/ protein ratio is a valuable tool for the dietary treatment and food education.
