HERNANDEZ, Pablo; MATA, Claret; VELAZCO, Yuly  e  LARES, Mary. Characterization of food consumption in healthy adults in the Metropolitan Area of Caracas - Venezuela. Diaeta [online]. 2018, vol.36, n.162, pp.11-20. ISSN 1852-7337.

Abstract Introduction. Dietary assessment studies provide information about food and nutrient intakes status by comparison with referencial values. The objective of the study was to describe the trends of food consumption in a group of healthy individuals in the Metropolitan Area of Caracas - Venezuela during the first quarter of 2013. Materials and methods. The group that was studied consisted of 60 healthy individuals of both sexes, aged between 18 and 59 years old. Three food intake recalls were carried out and some dietary behaviors were identified. Results. Among the main results, 60% were female and 57% belonged to socioeconomic strata II. The mean caloric intake was 1855 ± 664 Kcal/day and the diet in general was considered hyperproteic, fat normal and low carbs in 71,7%, 51,7% and 75,0% of the group, respectively. It was known that the oil for dressing is mainly olive one while for cooking other vegetable oils are used. 45% consumed fried foods 1-3 times per week and 52% never added table salt to their meals. Conclusion. The results obtained reflect that it is a group that adheres to some healthy eating practices; however, it shows weaknesses in the nutritional quality of the diet. The need for intervention in nutrition information and education is evidenced while diversifying the daily diet and increasing the nutritional quality of regular food.
