This contribution is part of the question about the link between global transformations and local Argentine agricultural sector. To this end, we analyze the adaptations the hegemonic production model, compared to the specific conditions of the territory, focusing on the production of olive, in Cruz del Eje Department-Córdoba Province. The research is organized into the following sections: I) Explanatory dimensions hegemonic production model agricultural, II) Correlate the same in the Province of Córdoba, III) Adaptation of the model to the production of olive in Cruz del Eje, III) and Reflections. The paper uses primary information sources of field observation and semi-structured interviews conducted in the study area during 2011 -and secondary- academic and statistics provided by the Experimental Station of Cruz del Eje, INTA.
