Abstract

ECIOLAZA, Florencia et al. Analysis of gastronomy associated with immigrant groups from Pigüé: province of Buenos Aires, Argentina. Estudios Socioterritoriales [online]. 2019, vol.26. ISSN 1853-4392.

During the last decades, there was started a process of integral valuation -approach SIAL- centered on the links between an activity and its products with the territory, where there are valued the specificities that are generated in relation to the above mentioned links, and therefore, they reach to the territorial development.For previously exposed, the aims of the present work consist of analyzing the historical evolution of Pigüé's gastronomy associated with the immigrant groups over time and determining if some type of (territorial/cultural) anchorage and/or processes of location and delocalisation of gastronomy are established.The results show that there is a cultural anchor of the averoynes´ gastronomy in Pigüé, mainly in the reference group analyzed. However, the typicity of these products cannot be confirmed, due to the absence of a specific quality that identifies them with the territory.
